Baked Chicken Taquitos

I love Mexican food! All of my friends and family know if I could eat it every night, I would. My go-to Mexican dish at home is a ground beef taco salad, but sometimes I like to switch it up and make something different.

I went to Costco today and picked up a rotisserie chicken while I was there. They have the best ones and you can’t beat the price either! When I got home I was craving Mexican food and didn’t have ground beef, so I got creative with what I did have at home and threw together these Baked Chicken Taquitos. They were so easy to make and they tasted awesome! One of the boys even asked for seconds. 🙂

This is a great dish to make during the week when you don’t have a lot of time to meal prep. All you do is mix the spices with the shredded chicken, fill a tortilla with the chicken and some cheese, roll them up, brush them with a little olive oil and bake them for 20 min. That’s it! So easy. Here is a pic of the deconstructed version I made for my kids!

P.S. If you want to make it a little healthier, use corn tortillas instead.
